Judith Beto has taught nutrition sciences courses at Dominican for over 20 years, and most of her research has focused on nutrition for those with kidney failure. She is a licensed dietitian in the State of Illinois and registered dietitian with the American Dietetic Association. She directs the Recipe Box Cafe, a 50-year tradition on campus, which showcases a weekly meal open to the public that demonstrates healthy creative eating in a lunch or dinner setting. Since 1990, she has also held a position as a research associate for the Division of Nephrology and Hypertension at Loyola University Medical Center dialysis unit.
