Judith Beto

Professor, Nutrition Sciences

Judith Beto has taught nutrition sciences courses at Dominican for over 20 years, and most of her research has focused on nutrition for those with kidney failure. She is a licensed dietitian in the State of Illinois and registered dietitian with the American Dietetic Association. She directs the Recipe Box Cafe, a 50-year tradition on campus, which showcases a weekly meal open to the public that demonstrates healthy creative eating in a lunch or dinner setting. Since 1990, she has also held a position as a research associate for the Division of Nephrology and Hypertension at Loyola University Medical Center dialysis unit. Her current research focuses on the challenges of chronic education burnout (both patients and professionals) and is evaluating the efficacy of weekly focused 10-minute innovative interactive education session while patients are receiving treatment on the impact of a single patient-chosen health goal measure.
